Looking to prepare a Valentine’s Day treat for the sweeties in your life? Consider these Ancient Fruit and Superfood Chocolate Cups, two of the most popular desserts I make. They come together in minutes, look beautifully artisan and are topped with a variety of health-promoting goodies.
Ancient Fruit and Superfood
makes 12 cups or 24 mini-cups
1 ½ cups non-dairy semi-sweet or dark chocolate chips
option 1 ancient-fruit toppings:
1 ½ tablespoons chopped dried dates
1 ½ tablespoons chopped dried figs
1 ½ tablespoons pomegranate arils
option 2 super-food toppings:
2 teaspoons whole chia seeds
2 teaspoons whole flax seeds
1 tablespoon cocoa nibs
1 tablespoon pumpkin seeds
1 tablespoon goji berries
Line a 12 cup, or 24 mini-cup muffin tin with cupcake liners.
In a medium sized bowl, microwave the chocolate chips for about two minutes, periodically stopping to stir them, until melted.
Divide the chocolate evenly in the prepared muffin cups.
On top of the chocolate, distribute either the option 1 or option 2 toppings evenly. Sprinkle with sea salt, if desired.
Place in the refrigerator for about 20 minutes to harden.
