They come together in minutes, look beautifully artisan and are topped with a variety of health-promoting goodies.

Fruit & Nut or Superfood
Chocolate Cups
makes 12 cups or 24 mini-cups
Ingredients:
1 3/4 cup non-dairy semi-sweet or dark chocolate chips (I find Guittard melts best)
Option 1 – Fruit & Nut toppings:
1 Medjool date, finely chopped
1 dried fig, finely chopped
2 tablespoons pomegranate arils
2 tablespoons pistachios, chopped
sprinkle of sea salt
or
Option 2 – super-food toppings:
2 teaspoons whole chia seeds
2 teaspoons whole flax seeds
1 tablespoon cocoa nibs
1 tablespoon pumpkin seeds
1 tablespoon goji berries
sprinkle of sea salt
Preparation:
Line a 12 cup, or 24 mini-cup muffin tin with cupcake liners.
In a medium sized bowl, microwave the chocolate chips until melted, periodically pausing the microwave to stir them. Microwaves vary considerable in power so timing for this step will vary.
Use a small spoon to divvy the melted chocolate evenly in the prepared muffin cups.
On top of the chocolate, distribute either the option 1 or option 2 toppings evenly. Sprinkle with sea salt, if desired.
Place in the refrigerator for about 20 minutes to harden.
