🥬 What Type of Kale Works Best for Kale Chips?

You can use:

  • Curly kale

  • Flat-leaf kale (also called lacinato or dinosaur kale)

Both varieties work beautifully for kale chips.

That said, I find that flat-leaf (lacinato) kale tends to have a slightly more tender texture and taste a little bit less bitter.

However, I still love the Crunchy Kale Chips made with curly kale. It gives a lighter, more delicate chip with dramatic ruffled edges —  nice for presentation. Can’t chose? Don’t sweat it. Both curly and flat-leaf options are great!

Basically to make these chips, you’ll simply wash and dry the chopped greens, toss with the remaining ingredients, lay out on a baking sheet and bake. Here they are prepped and ready to go.

Nutrient Rich Snack

Cruciferous rich kale isn’t trendy by accident — it’s one of the most nutrient-dense foods available.

Kale provides:

  • Calcium — essential for bone strength and mineral density

  • Iron — supports oxygen transport and energy production

  • Vitamin K — crucial for bone metabolism

  • Dietary fiber — supports digestion, heart health, and blood sugar balance

Why focus on the calcium in this recipe?

Osteoporosis — a condition where bones become weak and more fracture-prone — affects millions of women and men as they age. Supporting bone health early and consistently matters.

While kale chips — like the ones pictured above— alone won’t prevent osteoporosis, incorporating  calcium-rich plant-based foods like greens (kale, collard greens, broccoli, bok choy, collards, and/or mustard greens), calcium-fortified plant milks, and calcium-set tofu into the diet is an important component of bone integrity when eating a plant-forward diet. 

Other good plant-based sources of calcium are almonds, almond butter, sesame seeds, tahini, figs and blackstrap molasses.

How much calcium? Adults should aim for 1,000 mg of calcium/day day and, if over 50, should aim for 1,200 mg/ day. If you’re not reaching this goal, it’s recommended that you take a calcium supplement.

Bones get stronger when we use them. Weight-bearing exercise stimulates bone remodeling and helps maintain bone density.

Effective options include: Walking (especially brisk walking), hiking, jogging, dancing, tennis or pickleball and stair climbing to name a few. Even simple daily walking has benefits for maintaining bone strength.

Resistance Training 

Strength training is particularly powerful for preventing osteoporosis.

Examples of resistance training: Bodyweight exercises (squats, lunges, pushups), resistance bands, free weights, weight machines

Vitamin D Matters

Vitamin D helps your body absorb calcium effectively. Without it, even a calcium-rich diet falls short. 

Sources of Vitamin D: Sensible sun exposure, fortified plant-milks, supplementation (if levels are low)

Crunchy Kale Chips

Servings 1
Calories 183 kcal

Ingredients
  

  • 10 cups chopped kale, loosely packed 2 inch by 2 inch pieces
  • 1 teaspoon olive oil
  • ¾ teaspoon maple syrup or more for a sweeter chip
  • 2 tablespoons nutritional yeast
  • ½ teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika

Instructions
 

  • Preheat the oven to 300℉. Line a baking sheet with parchment paper or a silicone sheet.
  • Place the chopped kale in a large mixing bowl. Add the olive oil and maple syrup. Use two mixing spoons or your hands to toss and thoroughly coat the kale.
  • Stir in the salt, garlic powder and smoke paprika and mix well.
  • Spread the kale out evenly on the prepared baking sheet. Place in the preheated oven.
  • Bake for 15 minutes. Remove from oven and toss so that the kale on the outer edge of the pan is moved to the middle and the middle pieces are moved to the outer edge.
  • Return to the oven and bake for an addionional 10-20 minutes until each piece is dry and crispy. If any pieces are well toasted and others are still moist or soft, you can remove the crispy pieces and return the pan to the oven.
