Dear Readers
This past weekend more than 3500 riders cycled across 46 towns in Massachusetts as part of the Pan Mass Challenge. I’m super proud of Dan and Katie for cycling a combined total of almost 300 miles for this charity fundraiser. Here they are feeling surprisingly well at the end of a 100 mile stretch.
After the ride was finished, Dan and I had a fabulous time on the Cape. We stayed with dear friends at their charming farmhouse, dating circa 1700s. It is nestled in between two kettle ponds and the gardens and views are just breathtaking.
Our hosts are fantastic cooks and plant-based cuisine enthusiasts. We woke up on Sunday morning to a feast of Veggie Tofu Scramble, Vegan Banana-Nut Chocolate Chip Muffins and Acai Bowls. For those of you who don’t know about Acai, it is an antioxidant rich berry from a species of Palm Tree. You can watch Dr Greger’s video to learn about the superfood here. The Acai Bowls were divine.
I had never eaten an Acai Bowl before, let alone made one. So, I was happy to videoMatt demonstrating the preparation. I hope you find it as educational and entertaining as we did.
