When I first went vegan, I was thrilled to discover nutritional yeast, an ingredient known for its umami-rich, cheesy flavor. It’s delicious sprinkled on popcorn, in Cashew Parmesan, tossed in salads, and blended into pasta sauces, dressings, and dips. What’s more, some nutritional yeast brands are fortified with vitamin B12, which anyone eating a plant-based diet absolutely must obtain from either fortified foods or supplements.

What kind of mushrooms work best?
Baby Bella, Cremini and White Button mushrooms are a great everyday choice, but go ahead and use any mix of mushrooms  you like.Shiitake, oyster, or maitake will add even more flavor.

Can I make this oil-free?
Yes. You can sauté the mushrooms in a splash of vegetable broth instead of oil and still get great flavor.

Can I add greens?
Absolutely. When plating, layer some sautéed spinach or kale onto the tomatoes for added color and nutrients.

How do I keep the mushrooms from getting soggy?

Polenta with Mushrooms & Balsamic Tomatoes

Servings 6 people

Ingredients
  

  • Ingredients for the balsamic tomatoes
  • 1 tablespoon olive oil
  • 1 large onion sliced into quarter moons
  • 2 cloves garlic minced
  • 1 28-ounce can chopped tomatoes
  • tablespoons brown sugar
  • ½ teaspoon sea salt
  • 2 tablespoons balsamic vinegar
  • Ingredients for the creamy mushrooms
  • ¼ cup raw cashews soaked for 2 hours and then drained, if not using a high-speed blender
  • 2 tablespoons soy sauce or tamari
  • ¼ cup water
  • teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 pound baby bella, cremini, or white button
  • mushrooms sliced
  • 1 teaspoon dried thyme
  • Ingredients for the polenta
  • cups water
  • 2 teaspoons sea salt or to taste
  • cups polenta
  • ½ cup nutritional yeast
  • Dried or chopped fresh thyme, red pepper flakes, fresh basil (cut into thin strips), and/or nutritional yeast optional, for serving

Instructions
 

  • To make the balsamic tomatoes, heat the olive oil in a large skillet over medium-high heat. Add the onions and a pinch of salt. Cook for 4-6 minutes or until the onions are soft and beginning to brown. Add the garlic and heat for 30 seconds.
  • Add the diced tomatoes, brown sugar, salt, and balsamic vinegar. Bring to a boil, then turn the heat down to medium. Heat uncovered for 20 minutes or until the diced tomato softens into a chunky sauce.
  • To make the creamy mushrooms, blend the cashews, soy sauce or tamari, water, and pepper in a blender until very smooth. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the mushrooms and a pinch of salt. Once some mushroom liquid has accumulated in the skillet, turn the heat up to medium-high and cook for an additional 6-8 minutes or until the mushrooms have softened, released most of their moisture, and begun to brown.
  • Stir the thyme and cashew cream sauce into the mushroom mixture and heat for 30 seconds or until warm.
  • To make the polenta, stir together the water, salt, and polenta in a medium pot. While stirring to prevent lumps, bring the slurry to a boil, then turn the heat down to simmer. Heat for 5 minutes, stirring periodically. Turn off the heat and stir in the nutritional yeast.
  • Serve the warm polenta topped with the balsamic tomato sauce, creamy mushrooms, and optional toppings, if desired.
