Vegan Creamy Caesar Dressing
Bring your salads to life with the tart, cheesy and creamy, umami rich dressing.
- 3/4 cup whole raw unroasted cashews
- 6 tbsp nutritional yeast flakes
- ½ cup fresh lemon juice
- ¼ cup water
- ¼ cup white miso
- 2 tbsp capers with brine
- 1 tsp Dijon mustard
- If you do not have a high powered blender, in a medium sized bowl, cover the cashews with water and allow to soak for 2-3 hours to soften. If you do have a high powered blender such as a Vitamix or Blendtec, skip right on to the next step.
- Blend all of the ingredients togther until creamy. If too thick, add additional water, 1 tbsp at a time, to reach desired consistency.
