Simple Oil-Free Hummus

This is a delicious whole-food plant based hummus.

  • food processor


  • 1 - 15 oz can chickpeas rinsed and drained or 1½cups cooked chickpeas (in both cases save ¼ of the chickpea water)
  • 2 tbs fresh squeezed lemon juice
  • ¾ tsp salt
  • ¾ tsp ground cumin
  • 1 tbsp tahini
  • 3 tbsp chickpea water more or less to reach desired consistency
  • 1 clove garlic and/or 2 tbsp fresh dill, optional
  • Garnish with a sprinkling of paprika


  • Blend all ingredients together (including garlic and dill if using), in a food processor, for about 2-5 minutes to achieve smooth and creamy texture. Stop periodically to scrape down the sides of the food processor.
  • Add more aquafaba 1 tbs at a time (if necessary) to reach desired consistency.
  • Garnish with a sprinkling of paprika.
