Boston Vegan Baked Beans

Ingredients
  

For the Onions

  • cup diced onion
  • 2 tbsp olive oil or water

For the Sauce

  • ½ cup ketchup
  • ¼ cup soy sauce
  • 2 tbsp apple cider vinegar
  • 1 cup vegetable broth
  • 1 tsp liquid smoke
  • ¼ cup molasses
  • 1 tsp ground ginger
  • ¼ tsp ground clove

For the Beans

  • cups cooked navy beans, pinto beans or great northern beans this is equivalent to three 15 oz. cans

Instructions
 

  • Preheat the oven to 400°F.

For the Onions

  • In a medium sized pan, heat the water or oil over medium high heat. Sautee the onions for 3-4 minutes until softened and beginning to brown.

For the Sauce, Beans and Onions

  • In a large mixing bowl, stir all of the sauce ingredients together until well combined.
  • Add the beans and onions and toss until well coated.
  • Transfer to a 2 quart baking dish with lid. If you don't have a lid, cover tightly with tin foil.
  • Bake for 50 minutes until bubbly and thickened.
